First, What Is Malt?

Malt begins with a grain — most commonly barley — that goes through a process known as malting. The grain is soaked, allowed to begin germinating and then dried to stop that process at precisely the right stage.

This develops the grain and prepares the natural starches and flavour compounds that make malt such a versatile ingredient.

Depending on how the malt is dried and heated, it can take on many different characteristics. Lighter malts tend to retain a softer colour and more delicate cereal, biscuit and naturally malty notes.

In other words, malt is not one single flavour. It is the starting point for an entire spectrum.

Through more intensive controlled heating and roasting, the malt develops significantly deeper colour and much more pronounced flavour. Research into roasted malt shows that temperature and moisture during this stage play a major role in producing its colour and aroma.

As the malt is roasted, reactions including the Maillard reaction and caramelisation begin creating entirely new flavour compounds.

Notes that can move towards toast, caramel, cocoa, roasted nuts, chocolate and coffee, depending on how the malt is processed. Specialist malt producers similarly describe roasted malts as having considerably stronger colour and flavour than conventionally kilned malt.
